Quick question - can leftovers (if there are some!) be frozen? With just 2 of us at home, we often don’t eat a cake/loaf quick enough. I sometimes turn a quick bread recipe into muffins, which freeze well. Thoughts?

I think freezing should be okay! I would slice and wrap individually or lay paper between each slice before wrapping it all up tightly.

Yes! I almost developed these as muffins in fact. I never tested it so I can’t guarantee it’ll make exactly 12 but even if the pan is one or two short, they’ll be great. When you add the filling to the middle of the batter, try to avoid going all the way to the edge of the muffin cavity, it might burn while baking!

Wonderful, that’s all very helpful! If you ever need recipe testing help, I’m experienced! I’ve tested dozens of recipes for over 20 cookbooks while in production and I’ve also worked in recipe development myself. I’m happiest while baking!
